Irish Potato Bread -
Here is a genuine recipe from the old country.
1 lb. potatoes
4 oz. white flour
1 teaspoon salt
1/2 teaspoon baking powder
1 egg
a little bit of milk
Peel the potatoes, boil half until soft, then mash. Meanwhile, grate the remaining half of the potatoes. Mix the mashed potatoes, raw grated potato, sifted flour, salt, and baking powder into a soft dough with the egg and a little milk (if needed). Heat up a heavy (cast iron is best) greased pan or griddle. Drop dessert spoonfuls onto the hot pan and cook over a medium heat until nicely browned underneath, turn and cook on the other side. Be sure to cook right through. Serve piping hot with a lot of butter. Add to mixed grill to make a sumptuous meal.
